Fast forward to two months later and I made them! Why? Well, the obvious reason being that I intend to attempt every cupcake the MSC Group makes. Tracey from Tracey's Culinary Adventures selected Zucchini-Spice Cupcakes (pages 44-45) for this month's selection.

My changes:
• I halved the recipe and made 12
• Instead of lemon, I used orange zest
• Instead of walnuts, I used almonds
• Instead of cream cheese frosting (because I didnt have cream cheese) I made a yogurt icing
Yogurt icing:
- 1/2 cup plain yogurt (i used Stonyfield Farms Greek Style cause its thicker & creamier and I still had free yogurt coupons)
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
Combine all ingredients. Refrigerate for at least 30 minutes, to allow the icing to thicken. Spread on cupcakes.

Verdict: You know how you can taste the carrot in a carrot cake? Well... we couldnt taste the zucchini in this one. Are we suppose to? Because the flavor of the spices was more dominant. Oh, and the yogurt icing added a nice flavor... but I wish I could taste the zucchini a lil more.

No, zucchini doesn't have a very strong flavour. They are basically a spice muffin. That's why Martha used the cream cheese icing, for oomph.

Karen, you and I are so alike with this one! I didn't taste the zucchini either. I also thought the texture was more muffin-like than cupcake. Oh well.

Ooooh they look scrumptious. I love zucchini-pretty-much-anything. Zucchini doesn't have a dominant flavor like carrots do, so yeah, you can't really taste it. The warm spices in it are great though. And I love what you did with the icing. How creative!
No - you aren't supposed to taste the zucchini, silly. It just makes it more acceptable to eat cupcakes when there are vegetables present.

Giggle...I thought the same thing about this recipe, very skeptical, but I didn't want to let on as Tracey picked it and she is such a sweetie. Happy I didn't go with my first inclination of skipping it because we all loved the recipe. I jotted down your icing recipe to give that a try sometime as it sounds and looks delightful. Cute cupcake wrappers...they look like a party all by themselves with those cupcakes in them!

Zucchini just seems to blend in with the rest of the flavors. Yes, they were spicy and very good. Little specks of green in a cup full of yum!

Love your cupcake wrappers! They are beautiful. I've never been able to taste zucchini in bread, muffins, cupcakes, or whatever. Guess I really didn't think about it. I liked them...too much, I had two!

I don't think you're supposed to taste the zucchini in these. I think the spices were definitely the dominant flavor in the cupcakes.

My husband could not taste the zucchini. I have made zucchini bread and zucchini cake. Can't taste it there, either, and the bread is not really spiced. I guess zucchini is for texture more than taste. All I know is I like it.
Try the bread some time. I hope to blog in the near future.
